Welcome to Make It Monday! Today I would like to share a yummy Fall recipe...
Pumpkin Bars
Bars:
2 cups all-purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon cloves
1 cup oil
1 (16 oz) can pumpkin
4 eggs
1/3 cup chopped nuts (optional)
1/2 cup raisins (optional)
Frosting:
2 cups powdered sugar
1/3 cup softened butter or margarine
1 (3 oz) package cream cheese, softened
1 tablespoon milk
1 teaspoon vanilla
Heat oven to 350 degrees. Grease 15x10x1-inch baking pan. Combine all bar ingredients except nuts & raisins. Beat at a low speed until moistened. Beat 2 minutes at medium speed. Stir in nuts & raisins (optional). Pour into pan and cook 25-30 minutes or until toothpick comes out clean. Cool completely.
For frosting, combine all ingredients. Beat until smooth. Frost bars when cooled. Cut into bars. Store in refrigerator. Yields 48 bars. A 13x9x2-inch pan can be used, but bake for 45 to 50 minutes.
