When I was a little girl , Mom used to let me help her make homemade Gingersnap Cookies. I loved them then, and I love them now! So, on Christmas Eve when we gather with family to devour lots of tasty finger (junk) foods...dips, cookies, cakes, sandwiches, etc......I will be serving Mom's Homemade Gingersnap Cookies.....made by my daughter & I.
Gingersnap Cookies:
1/4 c. butter
1 c. brown sugar
1 egg
1/4 c. molasses
2 1/4 c. all-purpose flour
2 tsp. soda
1 tsp. cinnamon
1 1/4 tsp. ginger
1/2 tsp. cloves
1/4 tsp. salt
extra sugar to roll cookies in
Mix:
1/4 c. butter, 1 c. brown sugar, 1 egg, 1/4 c. molasses.
Blend in 2 1/4 c. all purpose flour, 2 tsp. soda, 1 tsp. cinnamon, 1 1/4 tsp. ginger, 1/2 tsp. cloves, 1/4 tsp. salt.
Cover and chill 1 hour. Heat oven to 375 degrees. Shape dough into 1" balls (about a teaspoon full). Roll balls in granulated sugar. Bake 8 minutes-should be soft.
Makes 4 dozen.
